Ingredients

1 tablespoon butter
1 chopped onion
1 10-ounce package of frozen, chopped spinach, thawed and drained
1 9-inch refrigerated ready pie crust
1 teaspoon all purpose flour
1/2 cup grated Monterey Jack cheese
1/2 cup grated parmesan cheese
4 eggs
1/4 cup low fat cottage cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon dried dill weed

Directions

  1. Preheat your oven to 375°F.
  2. Melt the butter in a medium skillet over medium-high heat.
  3. Add onion and sauté about eight minutes or until onions are translucent.
  4. Add the spinach and stir for about three minutes until the spinach is dry. Allow this mixture to cool slightly.
  5. Dust one side of the crust with flour. Transfer to 9-inch quiche dish or pie pan, floured side down.
  6. Press the crust into the pan and seal any visible cracks. Trim the edges of the crust.
  7. Sprinkle both cheeses over the bottom of the crust, then add the spinach mixture.
  8. In a large bowl, beat eggs, cottage cheese, salt, pepper, nutmeg, and dill weed. Blend this mixture well.
  9. Pour the mixture over the spinach.
  10. Bake for about 50 minutes or until the filling is set. Cool completely before serving, then cut into wedges.

Tips and Tricks

  • If you're looking for an extra boost of flavor, consider adding mushrooms and bacon to the spinach mixture. Drain the mushrooms before using and chop them into small pieces. Break the bacon into bite-sized pieces.
  • Par-bake the crust. Par-baking means placing the crust in the oven for about 10 minutes before adding the filling. Taking this step will ensure the crust is crisp and delicious rather than gooey and gummy.
  • Give the quiche room to grow. Just like cupcakes, eggs will rise when they bake. Fill the pie crust, leaving space at of the top of about one-fourth the depth of the pan. This space will allow plenty of room for the eggs to rise and avoid spillover.
  • Consider baking the quiche in a muffin pan. Not only will the mini-quiches cook faster, using a muffin pan will create easy individual quiches for everyone. The cook time for quiche in a muffin pan is around 30–40 minutes or until the filling is set.
  • Let the quiche rest after baking. Waiting is the hardest thing to do when it looks so delicious. A general rule is 45 minutes. Cutting the quiche too soon increases the chances of egg spilling out.
  • There are a number of mouth-watering sides you can serve with quiche. For breakfast, consider adding fruit. For dinner, consider mashed potatoes or grilled asparagus.
