Classic Banana Bread

Ingredients:

  • 2-3 very ripe bananas
  • 1 ½ cups all purpose flour
  • ? cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt

Directions:

  1. Preheat oven to 350 degrees F and butter a 4x8 loaf pan.
  2. Mash bananas with a fork until smooth and mix in melted butter.
  3. Stir in baking soda, salt, sugar, egg, vanilla extract, then flour.
  4. Pour batter into the loaf pan and bake for 1 hour or until toothpick comes out clean.

Chocolate Chip Banana Bread

Ingredients:

  • ¾ cup butter (at room temperature)
  • 1 ½ cups sugar
  • 2 eggs
  • 1 ? tablespoons milk
  • 3 ripened bananas
  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ bag chocolate chips

Directions:

  1. Preheat oven to 350 degrees F.

Ingredients:

  • 1 ½ cups sugar
  • 1 cup sour cream
  • ½ cup butter, softened
  • 2 eggs
  • 1 ¾ cup (3 or 4) ripe bananas, mashed
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoons salt
  • ½ cup chopped walnuts (optional)

Frosting:

  • ½ cup butter
  • 4 cups powdered sugar
  • 1 ½ teaspoons vanilla extract
  • 3 tablespoons milk

Directions:

  1. Preheat oven to 375 degrees F, then grease and flour a 15x10 inch jelly roll pan.
  2. In a large bowl, beat together sugar, sour cream, butter, and eggs until creamy.
  3. Blend in bananas, vanilla extract, flour, baking soda, salt and blend for 1 minute, then stir in walnuts.
  4. Spread batter evenly into pan and bake 20-25 minutes or until golden brown.
  5. For frosting, heat butter in a large saucepan until boiling. Allow butter to turn a light brown, then remove immediately.
  6. Add powdered sugar, vanilla extract, and milk to the butter. Whisk together until smooth.
  7. Spread the frosting over the warm bars.

Cream Cheese-Filled Banana Bread

Ingredients:

Bread:

  • 1 large egg
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • ¼ cup liquid coconut oil (can substitute canola or vegetable oil)
  • ¼ cup sour cream (can substitute Greek yogurt)
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of salt

Cream cheese filling:

  • 1 large egg
  • 4 ounces softened cream cheese
  • ¼ cup granulated sugar
  • 3 tablespoons all-purpose flour

Directions:

  1. Preheat oven to 350 degrees F. Spray one 9x5 inch loaf pan with floured cooking spray.
  2. Add egg, sugar, coconut oil, sour cream, vanilla in a large bowl and whisk to combine.
  3. Add bananas and stir to combine.
  4. Add flour, baking powder, baking soda, salt, and gently stir with a spoon until just combined. Set aside.
  5. Spoon two-thirds of the batter into the prepared pan, smoothing the top lightly with a spatula. Set aside.
  6. In a large bowl, add all ingredients for the filling and whisk until combined.
  7. Evenly pour the filling mixture over the bread, smoothing the top lightly with a spatula.
  8. Top with remaining batter.
  9. Bake for 48-50 minutes, or until top is domed and golden.

Ingredients:

  • 1 ¾ cups of flour
  • ¾ cup of granulated sugar
  • ¾ cup of brown sugar
  • 1 cup of ripe bananas, mashed
  • ½ cup vegetable oil
  • ? cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

Topping:

  • ½ cup flour
  • ½ cup brown sugar
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon cinnamon

Directions:

  1. Preheat oven to 325 degrees F and grease a 9x5 pan.
  2. In a large bowl, whisk eggs, buttermilk, and oil together.
  3. In a separate bowl, add flour, salt, baking soda, and cinnamon and stir to combine.
  4. Add granulated sugar, brown sugar, mashed bananas, and vanilla to the egg mixture and mix well.
  5. Combine flour mixture and egg mixture and mix well.
  6. Pour batter into the greased pan.
  7. For the topping, add brown sugar, flour, and cinnamon to the softened butter and mix until it begins to look lumpy.
  8. Sprinkle topping over the banana bread mixture and bake for 75-85 minutes or until a toothpick comes out clean.

Ingredients:

  • 1 ¾ gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ? cup butter, softened
  • ? cup sugar
  • 2 eggs
  • 1 mashed banana

Directions:

  1. Preheat oven to 350 degrees F and grease a loaf pan.
  2. In a bowl, mix together flour, baking soda, and salt.
  3. In another bowl, mix the softened butter, sugar, eggs, and mashed banana together.
  4. Add the flour mixture to the banana mixture gradually until its not lumpy.
