Super-Simple Slow Cooker Pork Tenderloin with Green Chilies

The delicious pork tenderloin has been a culinary classic in America for centuries. It can be cooked in the oven or on the stove, but the best way to cook it is in a slow cooker. Talk about delicious! It makes the tenderloin literally fall apart while remaining moist. While it's great on its own, you can use green chilies to kick it up a notch. Here is a recipe to make super-simple green chile pork tacos.

Ingredients:

4-pound boneless pork loin
1/2 cup diced onion
1 10-oz. can diced tomatoes with green chilies
1 16-oz. jar salsa verde
3 limes, juiced
1/2 teaspoon garlic salt
1/2 teaspoon chili powder
3/4 teaspoon ground cumin
8 taco-sized tortillas
Sour cream (optional)
Shredded cheese (optional)

Directions:

  1. Spray your slow cooker with nonstick cooking spray or rub it with olive oil.
  2. Begin heating the slow cooker on low.
  3. Place the pork loin in the slow cooker and stab it with a fork or knife approximately every inch. 
  4. Add the remaining ingredients through the cumin and place the lid on the slow cooker.
  5. Cook on low for 6–8 hours. Do not mix or stir it during the cooking time. Lifting the lid will evaporate the liquids inside and cause the slow cooker to lose heat.
  6. Check the meat after six hours. It should be fully cooked and falling apart. If it’s not, add more time.
  7. Once the loin is finished cooking, use two forks to shred the pork. You can also place the pork loin in a standing mixer and shred it using the dough hook attachment. If you use a standing mixer, return the pork to the slow cooker after shredding.
  8. Stir to combine shredded pork with all of the juices created in the cooking process.
  9. Serve on tortillas with sour cream and shredded cheese.

Tips:

  • This recipe is also amazing served over Spanish rice.
  • Consider marinating the pork in a Ziplock bag with all of the ingredients through cumin for at least 24 hours. Marinating will give your pork loin plenty of flavor as the pork soaks up the liquid.
  • You can prepare this meal ahead of time and store it in the freezer for a quick dinner. Thaw the ingredients and place them into the slow cooker. Cook for 6–8 hours.
  • Consider purchasing a fresh pork loin from a butcher to avoid the preservatives found in the popular brands of pork loin you’ll find in most supermarkets.
  • If you purchase a fresh pork loin, be sure to cut off the silver "skin" on the top of the loin. This membrane is inedible and will make shredding nearly impossible.
  • The amount of time you need to cook your pork loin depends on your slow cooker and the size of the tenderloin. Some slow cooker models run hotter than others, so be sure to keep a close eye on the pork loin after six hours. An overcooked loin can result in dry, tough meat.
