Awareness for gluten intolerance has been rapidly growing, and many other people have made the choice to avoid gluten in their diets for other health reasons, like those who follow the Paleo diet. It used to be nearly impossible to enjoy desserts, pizza, pasta, and many other food items, but now there are many delicious alternatives so you can still enjoy your favorite foods.
Some of the most popular alternatives include coconut flour, almond flour, and soy flour. Because of these grain-free flours, you are still able to retain the same texture and taste in your recipes; some of these flours are even said to taste better! There is an abundance of mouthwatering gluten-free dessert recipes that even those who aren’t gluten intolerant will enjoy, and one of the most tempting ones is Gluten-Free Rich Dark Chocolate Brownies.
Gluten-Free Rich Dark Chocolate Brownies
- 1 cup dark or semi-sweet chocolate chips
- ½ cup coconut oil
- ¾ cup light brown sugar
- ½ cup almond meal
- ½ cup sorghum flour
- ½ tsp fine sea salt
- ¼ tsp baking soda
- 2 eggs
- 1 tbs vanilla
- For topping: 2-3 tablespoons chocolate chips, ½ cup chopped pecans
- Preheat oven to 350 degrees F and line a square baking pan with parchment paper (8”, 9”, or 10” will work).
- Combine chocolate and coconut oil in a glass bowl and melt in the microwave. It should take a couple minutes at medium power, stirring every 30 seconds.
- Combine brown sugar, almond meal, sorghum flour, salt, and baking soda in a mixing bowl and stir to combine.
- Add eggs and vanilla to the dry mixture and beat with mixer until combined.
- Pour in melted chocolate and beat again until the batter thickens and becomes smooth and shiny. It will be runny at first, but will thicken up after a few minutes.
- Pour mixture into the parchment lined pan and smooth across the pan. Top with chocolate chips and nuts if desired.
- Bake on the middle rack of the oven for 30-35 minutes. The top will crack when the brownies are done.
